Freezer Meals: Easy Chicken Dinner

This is one of the quickest freezer staples for busy families. Shredded chicken can be used as a base for so many dishes. It can be used for Shredded BBQ chicken sandwiches, Nachos, Tacos, Burritos, Enchiladas or Chicken casseroles.

You’ll Need:
2 or more lbs. of chicken
your favorite basic seasonings
1 c. water for every three lbs.
Crock pot
Rinse chicken and place inside crockpot and season.

Pour water over chicken and mix until chicken is coated with seasoning.Cook on high 4-6 hours until chicken pulls apart easily with a fork. Next, strain juices. The juices can be used as a broth or base for chicken gravy. Juices can also be cooled and poured into a an ice tray and frozen for future use. Freeze and save in a Ziploc bag. Finally shred the chicken.

At this point you can divide the chicken into dinner sized portions. You can prepare meals according to meal ideas. For instance, for BBQ chicken, just add bbq sauce. For Cream of Mushroom chicken add a can of Cream of Mushroom and for Mexican meals, add taco or enchilada seasoning. Finally, store flat in a freezer bag. The image below is plain shredded chicken.

Do you have a meal idea for shredded chicken? If so I’d love for you to leave a comment letting us know.

  1. I noticed the Chex party mix seasoning mix packet in your picture. I have never though of using that as a seasoning for other foods. Are there other ways to use it?

Not that I have tried. I’ve used it to make Chex mix and in shredded chicken. I’m sure it would be great on any meat though.

This is wonderful! I recently made BBQ shredded chicken sandwiches, and it was a HUGE hit with my family.

I am cooking more chicken right now for a leadership training event that my husband is hosting at our home this weekend. We will be having your shredded chicken (with BBQ!) on rolls for lunch tomorrow.

    Thanks so much!

Thanks for the great post! I hadn’t thought to cook chicken breast in the crockpot like that for shredded chicken! EXCELLENT!

My question regarding freezing chicken is this: how do yoi=u keep it from getting that funky freezer taste? My cubed chicken always tastes funny after having been frozen. I used to put it in a quart-size freezer bag. Any thoughts?

    Thanks again!

I use shredded chicken for enchiladas and for chicken soup. I’ve never thought to make a large amount at once and freeze the rest. Glad I stumbled upon your blog.

  5. Poppyseed chicken is a staple in my house. Easy as pie, Shredded chicken, sour cream, Cr of whatever ( Chicken, Mushroom,or Celery) soup, and poppyseeds. Mix and put in your baking dish. Melt a stick of oleo and crumble one sleeve of Ritz crackers into the melted oleo. Top casserole with this and bake at 350 untill bubbly.

  6. great idea. πŸ™‚ i find baking it makes it too dry.

i think everyone has a quick/easy chicken pot pie recipe – but i’ll share mine any way:

    1 lb shredded chicken
1 can cream of chicken soup
    1 can mixed veggies
2 tbsp sour cream (for thickness)
    2 pie crusts

    bake @ 350 for about 30 minutes.

  7. I love easy and quick things to put in my freezer. This is perfect. Thank you so much for sharing.

  8. Outstanding idea! Thanks, I needed that – just wish I would have thought of it before. πŸ™‚
