I spent a good deal of last week making some meals for the freezer. Many of the items bought on sale helped me plan some simple freezer meals for the future. I made chicken fingers…
mini-pizzas using Thomas English muffins, Pace Salsa and shredded mozzarella.
The kids loved them.
I also made some honey glazed carrots.
1 stick of butter
1/2 c. brown sugar
2 lbs. of carrots
melt butter over low heat
add 1/2 c. of brown sugar
add carrots and toss.
At this point you can freeze or place on a baking sheet in a single layer and bake for 15-20 minutes on 350 degrees.
We also cooked up 10 lbs. of London Broil seasoned with McCormick Grillmates
and Italian Flat leaf parsley from my garden
Cooking meat for the freezer can be one of the most time saving decisions you could ever make. One of the London Broil was used for dinner and the others were sliced or shredded for future meals.
While the oven was on my oldest daughter (15 y/o) decided to bake a chocolate bundt cake.
