Kickin’ Vegan Quesadillas

INGREDIENTS:
* 4 flour tortillas – 10”
* 1/4 cup fat-free refried beans
* 1 dash cumin
* 1/4 cup salsa
* 2 teaspoons fresh cilantro – diced
* 8 Rice Vegan® Pepper Jack Flavor Slices
INSTRUCTIONS:
Heat non-stick skillet. Mix refried beans, cumin and fresh cilantro. Spread refried bean mixture over half of each flour tortilla. Place the Veggie Slices over the beans, then cover with salsa. Fold bottom half on top. Heat in non-stick skillet on both sides until golden brown and slices are melted. Cut each tortilla into 4 wedges and serve each person 2 wedges. (Serves ![]()
Note: For a milder flavored recipe, use Vegan® or Rice Vegan® Cheddar Flavor Slices.

Thanks for posting. We are always looking for interesting vegetarian or vegan meals, even though we are not 100% vegetarians.
