This is week three of our meatless diet plan and it has been a rough past week. I must admit…I ATE MEAT this past Saturday…LOT’S OF IT. I had gone three weeks without meat and decided to give myself a break. I did not know that I would miss it so much.
So I am starting this week off with a meatless menu plan and here is what I came up with.
Sunday- Spinach & Mushroom Lasagna, Garden Salad, Roasted Chicken (for guest) & Potato Salad
Monday- Overstuffed Baked Potato, Corn on the Cob
Tuesday- Tri-Color Pasta Salad w/ brocolli, tomato, bell peppers, carrots, cucumbers
Wednesday- Boca Chicken (Protein & Soy patties) Sandwiches & French Fries
Thursday- Tofu & Cabbage Egg Rolls w/ sauteed Sugar Snap Peas
Friday- Baked Macaroni, Lady Cream Peas, Steamed Rice & Fruit Salad
