This week we are having an all meatless menu. I am looking forward to this weeks lighter meals and have shared my dinner menu below.
We are having Rapinni for the first time, which is supposed to be a cousin to broccoli. If you’ve got a great recipe, I’d love for you to share it.
Preparing meatless meals is still very new to me so if you have some great meatless recipes I’d love to hear them.
DINNER 2/22 – 2/25
MONDAY – Lo Mein
TUESDAY – Baked Ziti with Garlic Bread
WEDNESDAY – Overstuffed Baked Potato w/ Sauteed Rapini
THURSDAY – Spinach Lasagna, Dinner rolls and Sauteed Fennel
FRIDAY – Steamed Veggies, Dinner Rolls and Wild Mushroom Rice
SATURDAY – Lentil Soup and Dumplings
SUNDAY – Spanish Rice and Beans with Plantians

I use the recipe from the Ronzoni box. I omit the meat. To make it true vegan you’ll need to substitute the animal based cheese with vegan cheese.
